Where Phuket Meets Gold

Newpolitan pizza, Italian pasta, tableside theatre.
A dining experience unlike anything in Phuket.

01 / OUR STORY

Born in Italy.
Made for Phuket.

THE HANDS BEHIND THE DOUGH

Italian cooking, carried to Phuket with time, care and a little more air.

We grew up eating pizza the way most people breathe: without thinking about it, and unable to stop. Pizza napoletana was not a meal. It was home. When we imagined a place where real Italian cooking could exist in Phuket, the question was simple: how could the cornicione become even more impossibly airy, even more alive?

The answer became what we call Newpolitan: a contemporary expression of Neapolitan pizza. The centre stays gummy and tender, while 96+ hours of fermentation develop deeper flavour and a finer crunch.

It is still pizza made to be shared. It is simply more considered, more expressive, and made for this place.

Cloud cornicione

A high, airy edge with a soft pull and a delicate finish.

DOP San Marzano

A bright, savoury foundation for the ingredients above it.

Live theatre

A room where the meal can move, without losing sight of the food.

THE NEWPOLITAN CRUST / ORO

A NOTE ON TEXTURE

The crust is not a handle. It is the point.

At about 80% hydration, the dough keeps enough water to open into that famous cloudy cornicione: delicate at the edge, tender through the centre.

02 / NEWPOLITAN

Not a secret.
Just detail.

Newpolitan is our contemporary reading of pizza napoletana. It keeps the familiar warmth, tenderness and gummy centre, while a long fermentation gives the dough time to develop its depth of flavour and delicate crunch.

96+

hours of fermentation

A long, cool rest for depth of flavour and a dough with a gentle, open structure.

80%

hydration

Enough water to help the dough open into a cloud-like edge while keeping the centre supple.

420°

oven finish

A high-heat bake that gives the cornicione colour and crunch without drying the middle.
